VOLCANO MUD SLIDE CAKE

Serving information: Makes 1 serving and gives you 1 ounce of protein and a full serving of fat.

This recipe is best left for maintenance or special occasions. It is a great recipe for a birthday cake and still be on “plan” without all the sugar and flour.

INGREDIENTS

  • 1 large egg
  • 1 Tbs. organic coconut oil or Kerry Gold butter, melted
  • Dash of vanilla extract
  • 2 Tbs. unsweetened cocoa powder
  • 1 heaping Tbs. Bob’s Red Mill Golden Flax Meal
  • 4 ½ -5 tsp. sweetener* (see below) **
  • Pinch of sea salt
  • Generous ½ tsp aluminum-free baking powder
  • 2 Tbs. water

INSTRUCTIONS

  1. Preheat oven to 350°F, if baking.
  2. Place all ingredients into a large coffee mug or well-greased 8 oz. ramekin and mix well. Microwave the mug for 40-50 seconds (keep an eye on it, as it rises quickly) or bake ramekin for 8-10 minutes. Muffin should be mostly cooked through, but still slightly gooey at the middle of the top. Eat it straight out of the mug or ramekin.

*Mix together ¾ cup erythritol, ¾ cup xylitol and ½ tsp pure stevia powder. Store extra for later use.

** You could use Swerve (erythritol and stevia blend) as your sweetener here, but the recipe says the other sweetening blend works best. Swerve has a higher powdered stevia content, so you have to use ½ the amount. In this case it would be 2 ¼ -2 ½ tsps.)
