This recipe was shared by one of our clients, Martha Brawley. Spinach bread is a great side that gives you the feel and texture of having a slice of bread… but it’s not! You can eat a slice of this “bread” warm with a pat of butter, topped with egg salad, or anything you like.
INGREDIENTS
- 1 10-12 oz package frozen chopped spinach, thawed and drained
- 4 large pastured eggs, beaten
- 1/4 tsp garlic, crushed
- 1/4-1/2 tsp Pink Himalayan salt, to taste
- 1/4 tsp ground black pepper
INSTRUCTIONS
- Preheat oven to 400˚F. Grease an 8×8 glass baking dish, or cut an 8×8 piece of parchment paper and place it into the bottom of a greased non-baking pan.
- Squeeze the excess water from the chopped spinach, using paper towels, if needed.
- Mix together spinach, eggs, garlic, salt and pepper. Pour into prepared pan and bake for 15 minutes. Cool slightly. Cut into 4 squares. Keep refrigerated.
